Amazingly simple yet delicious.

Perfect for dinners, it can just never go wrong.

Except, when you can't even boil the rice.

(Note: If you can’t boil rice, no big deal. You may be good at something else)

This is my mom-in-law’s recipe who was a great cook and every time she made this recipe, we’d say why she makes it in such little quantity. So little. there was hardly any left for next day.

With very few and very basic ingredients, Arabian rice are prepared very quickly. Chicken can be marinated beforehand. This will reduce the time of cooking significantly.

5 Ingredients for Arabian Rice:

Chicken (boneless) 500g (1 inch cubes)

Basmati rice 500g (boiled)

Capsicum 2 (medium cut into 1/2 inch squares)

Raisins 1/2 cup (soaked in water for 1/2 hour)

Onion (chopped) 1 medium

pomegranate seeds (optional and not part of the actual recipe)

for Marination

yoghurt 1 cup

white pepper 1 tsp

chinese salt 1 tsp

all spice powder (garam masala) 1/2 tsp

salt 1 tsp

red chilli powder 1/2 tsp

cardamom powder 1/2 tsp (very important ingredient, gives flavour to whole dish)

yellow food color (optional) a pinch

Oil 1/2 cup

Method for Arabian Rice

Marinate chicken with the above ingredient for atleast one hour.

In warm oil, fry onion till it starts to turn golden.

Add marinated chicken to the onions. Cook till chicken gets tender and water dries.

Add capsicum and turn off the heat.

Layering

In an oven proof dish, spread rice evenly. Also drop a pinch of yellow food color.

Cover with chicken sauce.

Spread raisins and pomegranate seeds evenly

Cover with Aluminium foil and bake for 10 minutes.
