Lets talk about cooking!
Your dad has started making frittata even before he knew this dish existed.
Sadly he couldn’t get it patented because people in Italy have been making and eating it for ages.
But how could we knew that. Only Italian we knew then was Godfather, and he barely ever talked about Pizza, let alone frittata.
It was one of those saturday mornings when the polar bear Chef in your dad wakes up after hibernation.
Yawning, he looks inside the fridge, find eggs, few other things and bring them to kitchen. And after 20 minutes, TAADAAAA!!!!
A masterpiece is created.
Along with a pile of dirty dishes.
Over the period of time things have been included and deducted from this recipe, depending upon their availability. Really, You can add almost anything in it. Its your choice.
My point is, if one can have aubergine or courgettes on a pizza then you can damn well have absolutely anything in your omelette.
Yes! Frittata is a form of an Omelette with a twist.
Very easy to make, it takes not more than 20 minutes to prepare.
After devouring it, you can easily skip lunch, because you won’t feel hungry for a long long time. Another benefit!
You may have noticed we usually have it before going out for one of our Thames walk or Museum tour or Hyde Park excursions
here goes the recipe
Eggs 3 large
Milk 2 tbs
cheddar cheese 4 tbs
(or whichever kind you have in your fridge, even the soft cheese that you kids eat would do)
chicken sausages (or shredded leftover chicken) 3 (sliced)
pitted olives (any kind, I prefer black) 8–10 (sliced)
Mixed Italian herbs 1 tsp
Crushed red chillies 1 ½ tbs
olive oil 2 tbs
an oven proof dish
1. Beat eggs in a bowl. Add milk and mix.
2. Oil the base of the dish.
3. Pour beaten eggs over the oil
4. Spread sausages and olives evenly on top.
5. Spread cheese and sprinkle with salt, crushed red chillies and mixed italian herbs.
6. Pre heat the oven including grill.
7. Place the dish inside the oven.
8. Keep a close eye, get it out once the surface starts getting brownish.
